The PC version of 11 with PUK is the most polished and where I would recommend starting, although each installment has a different take on the setting which makes all of them fun in their own way. RoTK isn't the sort of franchise where each installment is just an improved version of the same game, so it's worth trying out a few.

11 is the best in my opinion, but I liked 8 quite a lot too. 11 probably better to start with, 8 is more of an RPG.
