Why does the campaign suck so much compared to the first game?

Base oTTD is fairly conservative when it comes to game mechanics. You can get a lot of alternate rulesets as mods, but I don't know of anything that fiddles with station ratings. I think the fact that freight trains end up going as as as passenger ones because of game mechanics and should probably care more about throughput than speed in some cases, it's a relatively minor thing.
The thing station rating does is give you a bigger share of goods so it's sort of self regulating anyway. Add trains as needed to transport everything and you will get more of it, that's all.

How far back are we talking about? Admittedly this was quite a while back, but I tried that and it wasn't a very good experience. It turns out because of how game mechanics value speed a lot for cargo rates with slow and low capacity vehicles transport, especially overland is prohibitively expensive and hard to turn a profit on. Which is realistic I suppose, just doesn't work with transport tycoon gameplay all that much.

There's the Scott Joplin ragtime pack, as well as one with tons of traditional folk songs. If those aren't to your liking, It's probably possible to make your own with a ton of MIDIs of your own choosing.

What I'd use as someone who isn't into bloatcore train set gameplay.
Recommend playing on a map with a good amount of water to use those ships since you won't start with the greatest options for land travel.

I wish there was a mod that made the distribution less "send stuff as far away as you can". Even cargodist doesn't really help with that. I want to make cool logistics but its always a bit a of a joke compared to shipping steel from one side of the planet to the other, passing 99 factories along the way. It gives me the worst kind of autism.

Some kind of supply and demand system. I don't know. Cities generate demand and satisfying demand makes them grow more or less like it is now, industry has an overhead cost that they need to offset with what they sell, the more they sell the cheaper it gets, but they also need to offset the cost to buy the inputs, the more they ship the smaller their margins have to be to cover the operating cost, if the station is empty (so they can't produce enough to meet demand) then they increase the price they buy goods at to generate demand etc etc.

Ultimatel (you) would make money off the gap between buy and sell orders.

For passengers it sort of works. There's some issues but it feels nice for them to have actual destinations and transfer and change modes of transport.
It doesn't really work for freight and doesn't solve the >>2363943 issue because cargodist will only generate destination on the same network and the "meta" is to feed one factory on the other side of the planet as much as you can anyway so it will never ask you to deliver steel anywhere else.
The very simple timeXdistance calculation is one of my pet peeves of the game too. The absurdity of being paid to deliver coal from further away when there's unserviced coal mine closer and why does the power plant care how fast the coal train is going anyway. They should care about maintaining throughput, not punishing me for not having my freight trains go shinkansen speeds.
