Chopping through all these enemies takes away from the horror. You have nothing to fear because you are the most scary thing in there.
Its often just a pointless chore too with having to get rid of all the low level enemies to get anywhere.

and one day biting them repeatedly just to feel what it was like once more

it's not hard mode it's tedious mode
in a game of pure skill putting it on hard adds to the experience and the thrill but in SHf you are just padding the horror with a bunch of tedium and you end up with a lesser experience on hard
putting it on easy and breezing through the combat you'd at least get a more coherent story and world to have a small chance to get frightened in
and ideally your best weapon in horror should be speed and smarts to run away from danger
