How do you know that she doesn't? The only reason why we know of this one is because she thought of it while on stream. Given how long she is on stream and how long the average person sleeps (assuming consistent idea generation) there are at least 4-8 ideas for this one idea.
However, that doesn't mean that all ideas will happen, whether due to timing or just forgetting. CC mentioned doing an ASMR with GG where they are arguing parents in the neighboring room, and that never happened. Who knows how many ideas she comes up with and then either forgets, or realizes it would be far too much work.

A stream doesn't need a concept to exist. Thank Goodness You're Here, Half-Life, and Soma didn't happen because there was some clever idea she had. She just decided to do it because she could.
One thing you have to remember about collabs is that they aren't created because you don't have anything better to do. IRyS's was likely decided on the week of the previous collab. Bae's was talked about weeks before. Kiara's was sponsored content that was probably decided upon a month ago/whenever the UmaMusume collab was forged. And you can't just cancel them because you have an idea, because that is just really poor manners. There has to be an actually good reason (sick, I had an important event come up I forgot about, something major in my life happened, etc.) Solo streams are flexible. Collabs aren't. And you will have to deal with overbooking eventually.

Personally I think it’s Omega Ruby/ Sapphire but LGP/E does have a very pretty art style that is as colorful as the old 2d game, no game breaking glitches and definitely feel more polish because the scope was a lot smaller.
