It got really popular after word of mouth since the LN initial release failed to resonate with readers, then the initial illustrator abandoned the project and disappeared, but then they relaunched it with a different artist (the Pekora one), got a manga adaptation and later the anime.

Goblin Slayer has been my favorite pf newer anime for a fantasy setting with magic. The magic portion is pretty limited while also having utility, the bit with the MC never really loses its charm, there are bad guys and good guys, growth for characters that doesn't feel like 'I leveled up, my magic pool increased by 1!', etc.
