idk the right term but i feel like right handedness is something that people pick up and its not "ingrained"... most people end up right handed because most things are made to be right handed. and when it comes to writing most people who teach us are right handed so we pick that up as well. if we just switched things to be left hand orientation then we would see a rise in left handedness. its a trickle down effect

you'd see some overhang from the pieces that needs a backside to be all colored (like the hair needing its matching inside part), so when those pieces are lined up and glued together, you can probably use the scissors or knife to trim extra bits off! otherwise, leaving the white on is probably fine, or using sharpie to color it in like you suggested! and i use liquid white craft glue, i recommend that most!
i recommend gluing the tab that goes up into the legs first! and folding them up a little so the body can start sitting, that will help pinching in place!
you can also use the end of that brush to put pressure in hard to reach spots!
