A lot of seafood was actually considered to be poor people's food before the 1800s- Oysters didn't become popular in the UK until the Romans turned up. Eventually overproduction made them so common that they were being sold four a penny- Same deal with caviar, it was produced mainly in Russia and was so plentiful that it was handed out for free in bars. Then America joined in and reduced the sturgeon population to levels that made caviar only affordable by rich people- Lobsters didn't become a staple of rich Americans' diets until they started holidaying on the coastlines thanks to the development of railroads and developed a taste for them and the market drove the price up. Before that it was pretty common to see lobster shells in poor people's housesMost people didn't actually want to eat seafood, it was seen as a last resort if you had nothing else available
