What are the best options for sokeone who wants to get into anime for the first time as an adult (20s) in current year?

It depends if you want to explore all sorts of genres or only the "best/mature stuff", there's some dumb, comedy, slice of life or violent anime that only hits and hooks you if you're new to the medium, once you watch the best stuff then it could be hard to appreciate stuff like elfen lied, claymore, k-on!, haruhi,nichibros,

Almost everyone starts with these 3: Death Note, Cowboy Bebop, Samurai Champloo.
They are short, with lots of action scenes and easy to follow with high quality direction/animation.

After those a lot of people watch some of these: FLCL, Evangelion, Fullmetal Alchemist Brotherhood, Hunter x Hunter, KonoSuba, Attack on Titan.
