I'm not crazy, I'm sure I saw a trailer for some game where you run a classic fantasy Inn/Tavern at one of the PC game shows this year, but I can't find it searching anywhere among recent or announced games revolving around taverns or inns. It looked kinda like a choose your own adventure thing with a lot of dialogue, I remember some evil cultists or something walking in and blackmailing you to hide a body for them. I think it was a 2d indie game but I'm not 100% sure.

Nah, it had like a gritty old D&D style setting. And I'm pretty sure it wasn't 3d, but yeah not totally sure about that.
