Absolute fundamentals:
AOPS Prealgebra > AOPS Intro to Algebra > AOPS Intermediate Algebra > Book of Proof > Zeitz' Problem Solving

Core math undergraduate curriculum:
Spivak Calculus > any linear algebra book, they are kinda similar > any multivariable/vector calculus book, they are all shit > Morris Tenenbaum's ODE > Baby Rudin > any abstract algebra book, they are kinda similar

How to proceed from there is a matter of taste and your goal.

Other topics math undergrad usually requires:
- topology
- discrete math
- probability and statistics
- numerical methods
- measure theory
- complex analysis
- PDE

Usually optional:
- optimization
- more sophisticated version of the previously-mentioned subjects
- mathematical physics

The end goal for self-studiers are usually differential geometry or algebraic geometry. To learn them properly you need quite a bit of math knowledge and skill. Unless, of course, your goal is to learn enough statistics and other BS to learn how AI slop works.
