The real answer is that these mauscripts were put together in monastic orders which were subject to the attitudes, biases and symbolism of the country and time. Don't know specifically for the hare and whose heraldry/what association they have but the snails for example are a reference to the Burgundians. It's also possible that the hares are a reference to unbelievers as they are often depicted as half-human half-animal hybrids (e.g. on the Tympan of the Vèzelay basilica)

Huh? Are you responding to the right post? Illuminated manuscripts were expensive and rare and were almost solely produced by monastic communities. They aren't 'doodles' by bored monks they're intentional. Most of the illuminations are specifically in reference to whatever the text accompanying it is but often they use contemporary situations (heraldry/symbolism/whatever) as an analogy for the text. It's just that so much time has passed that what was at the time something identifiable by everyone and common knowledge like religious iconography is lost (just like if you took a meme 500 years back to the past few people if anyone would understand, they have no frame of reference or common cultural understandings to draw from). Actual doodles are also found, often when a monk signs his name somewhere in the manuscript or in the bindings
