I keep noticing something weird, which is Graeco-Romans gods being brought into literally anything, but mostly science and politics, where they shouldn't belong, but are somehow omnipresent. What's with crypto-polytheists? Do they actually believe in the gods they always bring up? Do they feel close to polytheism despite being mostly atheists because both are naturally opposed to monotheism? Do they make sacrifices to Greek goddesses? Is it a form of demon worship? Is it a cabal and do they have goals besides the spread of "democracy" and belief in science?

Why are the Moon missions named after Apollo and Artemis? Is there an occult or demonic angle? Why are statues of Greek gods in front of public buildings, why is Athena in front of the Austria parliament, and why is this pushed by people who claim to believe religion should be a private matter? Why can't I find anyone talking about this, least of all supposed monotheists who are supposed to be strongly opposed to worshipping other gods?

Pagan gods still stir up feelings of awe and are still widely-recognized archetypes with stories that resound with us no matter the era. Greeks are exceptionally still in public awareness since they are so well preserved through sculptures, stories, paintings etc, enticing people around the world throughout the ages.
You're right that there are a lot of cryptos out there because we see society still building monuments to them, utilizing them in new stories, choosing their names for our advancements etc... and that IS worship, no matter how in denial someone is about it.

The architects and the ones who fund these projects know full well what they are doing. It makes me laugh whenever someone tries to claim America for instance is a Christian country... when the founders did their darndest to keep the religion at arm's length from the actual governance, and their legacies are enshrined in things like The Apotheosis of Washington (very anti-Christian message to raise a man to god's level, all the more so to surround him with goddesses like Liberty etc.) Our monuments, the columns and reliefs used in state houses, Lincoln Memorial, Grand Central Station etc all tell a silent story about which gods still reign and are revered- consciously or not. And before you decide that the Baal worshippers who control things today are part of the same clique- they aren't, and that's why we see no major new monuments and sculptures made with Greek inspiration (or any other pantheon desu) in the past century. There was a silent coup that impacted not just governance and money printing, but also the secret societies that control the current of society from behind the curtain.

Ask the averagr Christian 'why' for all these things, they tell you their own safe rationalization- that they are simply great works that show our attempts to be like prior great civilizations, that Christians don't want to portray their god, whatever. The old gods are alive and well.

When Abrahamism arrived on the scene, despite what they tell you, it was convert or die for a very long time. Only certain bloodlines kept the old gods in secret, this is true, and it has allowed them enough time to survive the hard poinys and grow strong in secret until they can flourish again. It's not simply that truth will out; that which is beneficial will also get passed on, so if you believe in gods and paranormal, it only makes sense that decent gods that aid their followers will wind up with much stronger followings with 'healthier' cultivated followers over time, compared to the average.

Ha ha. You should have been around in the 1800s or even the early 1900s. Latin and Greek languages were considered core education at the university level. Architecture was all inspired by 'Greco-Roman" styling. Card-carrying (serious) Christians studied Greek and Roman mythology and no contradiction was seen in this.
Compared then, what you're seeing now is nothing.
Worry not about that, but about the Liberals and sub-humans taking over everything around you.

As a Pagan I can confirm. The biggest difference between the Pagan Gods and the Abrahamic God which I used to follow is the total neglect from the Abrahamic God compared to the actual aid and guidance I have received from Pagan Gods. Christians seriously Gaslight themselves about this. Entire sermons, doctrines, teachings, etc dedicated to explaining God's silent indifference as his followers suffer, and conversely why many outside of his influence live blessed lives. They have been had by a weak deity pretending to be much stronger than it really is.

Not necessarily. But even if someone is an atheist and finds they are drawn to certain figures to the point they dedicate their work via naming conventions, is that not a form of reverence?

Not in that sense, but I'm sure the more classical and academic approach to mythology is naturally more appealing to those sorts as opposed to being told to stop asking questions or sky daddy will roast them in hell.

I left for much the same reasons. Instant help from "someone" I just met, no strings attached, compared to decades of being ignored. And looking around in hindsight, it's kind of easy to tell which group I want to be part of: the group that's out living life, happier and more successful on average, vs a group that winds up neurotically repeating the same words and vows and self-admonishments while justifying all the nothing they have to show for their years of dedication and struggle.

A modern statue of Athena (or more likely Minerva who is not literally the exact same thing but fairly close) is engaging with a sort of static symbol rather than engaging with actual ancient worship.
Actual Athena worship considered her (originally at least) the patron of a specific city. This initially likely meant that she was considered to have literally lived in Athens. She was worshipped as part of an annual festival where a box maybe full of snakes or something was paraded through the streets to celebrate her part in the creation of the first Athenians, she was paid tribute to as the creator of the olive. She was considered to have created the first spider when pushing an act of hubris.
A statue of Minerva in a library or whatever isn't paying tribute to her for making her brother coom so hard the ground gave birth to a snake guy. It is invoking her as symbol of wisdom and good governance. It isn't an actual act of worship. The Olympians were not worshipped simply by putting up statues of them and using them as symbols. They were considered entities that you entreated and appeased through public ritual.
If an artist talks about having a muse he isn't literally claiming that a daughter of Zeus enters in to him to channel art through him. He means he is feeling inspired. Which of course no longer means to have a god in you. The Olympians are simply part of the shared symbolic language of the societies of Europe.
Just like how someone can use a cross to invoke its symbolic meaning without that invocation being a prayer, or the individual even being christian.

Its less that Yahweh doesn't give a damn about his followers and more that gods are really only meant to steward a small group of people.
My patron god Sucellus was equated to the Roman Silvanus, but despite that there are many aspects of life that Sucellus holds sway over that Silvanus has nothing to do with. Sucellos is the god of forests, abundance, protection, and agriculture for the Gauls and their descendants, and Silvanus serves that purpose for people of Roman descent. If I prayed to Silvanus, it would be like living in Tampa and calling Miami police department to come deal with a problem.
In that same way, Yahweh was only ever the god of certain aspects of reality for a few people living in an ancient desert. Some of those early followers spazzed out and started killing people, and now Yahweh has millions of randoms he has no reason to care about throwing prayers at him all the time. Somewhere along the way, he said something to his people that got blown out of proportion and now he's doing what all gods do: taking care of his flock and ignoring everyone else.
