They didn't eradicate ALL the druids, much of it can be attributed to the rather silly decision to only maintain their culture and beliefs through oral tradition. Very hard to pass shit down when there's no handbook and it takes 20 fucking years to become clergy. But another likely very substantial reason is that the Gauls were a druidic culture and they kept pissing the Romans off.
The druids couldn't handle sustained combat. They only had a maximum of 5 wildshape charges, and most of their spells suck eggs. Call Lightning would've been helpful for dealing with Roman tetsudo formations, but realistically most druids wouldn't have had terribly many lvl 3 spell slots.
