Why won't blender show this white texture as white? Its applying some kind of darkening to it, even though I'm directly connecting the RGB to the material output

Make sure you're in the correct color space for what you want (sRGB).... and in the Blender thread for shit like this.
Now this will be here for months until the mods fatfinger all the boards again.

I have images in the scene with a pure white background, and they render white. But the white material isnt.

You're not, set your View Transform to PBR Neutral or Standard.
Render settings like Exposure, Gamma, Tonemapping affect preview renderings too in Blender.
