I dunno how I'd write it, there's only so much you can do with the tanky retard character type in terms of other characters bouncing off them or looking good. Maybe subvert expectations and make her an actual martial artist despite how she looks and acts, so Riku winning is more than just hitting the big sandbag until she goes down.
