People remember the fights like Goku vs Kid Buu which are smoothly animated and better than anything in super but outside of a handful of fights, the animation is just passable. It was nothing special, of course airing episodes every week meant it had to take shortcuts

I think Toei simply streamlined their shitty output aided by digital art. Old DB didn't really have much better animation, but the art quality was better if you ask me. Modern Toei has more QUALITY moments, even if the thing is sorta the focus. So it's more a directorial failure.
Also older anime looks more grainy which adds some texture. Right is way too clean which is even worse when characters are wounded.

Even in the iconic Trunks vs Frieza fight, you can see a drastic change in animation quality.

It's funny to me how DBZ and DBS have the opposite thing going on: the majority of DBZ's janky moments are the result of Ebisawa and Uchiyama, guys who are so infamous that even more casual fans generally know who they are, which also means that the flaws of DBZ's consistency is closer to being the exception than the rule; comparatively, DBS's art direction under Yamamuro is so stiff and plasticky looking (on top of huge crunch, IIRC they started working on the episodes even before having an official logo made, someone please fact-check me here) that when Takahashi just threw all that shit out he got showered with praise for ot

Toriyama lacks imagination and simply didn't care when he introduced Super Saiyan God. To be quiet honest DBZ doesn't need new forms. What they needed was a variety of techniques to make fights interesting.

For me the last show I really enjoyed in earnest was maid dragon, honestly.
