I found the old Hunter x Hunter anime on youtube and enjoyed it.

I'm trying to find a the watch order for the rest of it, and I'm just finding short AI narrated videos with different info, and different names for the arcs.

I might just move onto the new series, then both movies.

Also did Hisoka's butt get smaller in the new series?

It doesn't recommend a watch order, it just list what exists.

Hunter × Hunter (1999) includes everything through the Yorknew City arc, so you want to start with episode 59 of the new anime, which is the start of the Greed Island arc.
Also I haven't seen the movies, but they're anime original, unlike the shows which are pretty faithful to the manga with little to no filler. The movies won't really fit into a modern watch order since they were made before half the arcs were written. Basically, just pick up at Greed Island and keep watching.
