Shounen romcom writers are creatively bankrupt. It's nothing new. You write what you know afterall and all of them are shut in workaholics who never had actual relationship in their life so they literally have no idea what happens when couples get together.

There's a reason why romance has an entire genre dedicated to itself; it's hard to get right, and can bog down a story that's not about it.Akira Toriyama was notoriously godawful at romance even by his own admission, so it's something he deliberately kept out of his stories, because he didn't feel he was skilled enough to write it

Aharen-san's manga is great (though the second season of the anime has too much anime original with the shota trap which makes it garbage). Eureka Seven is a great overall and they are together for most of the anime even if it gets a little melodramatic at parts.
