If I remove a lot of the obvious ones (One Piece, Yotsuba, etc.) and pick a recent-ish manga? I’d say Fool Night, very interesting thriller with a bit of supernatural elements.

if ongoing manga that i am caught up with count too, then it's definetely genikasuri.
Toshio Sako is arguably the best artist in the industry as of now, even if it's clear that his current artstyle really suffers from a non-monthly publishing schedule, and i feel like after the oga match the story will really get going.
If we are talking about already finished works, air gear is a lot of fun. It has a tone similar to early soul eater, and i love that more lighthearted early 2000s shonen manga style.
New mangakas don't know how to ecchi or have real fun with their series
