In this scene, he's using Wobbly Punches, which is a specific type of punch that changes direction last-second. It exploits a flaw in the Instinct/Mind's Eye skill where it can only predict the future based on current information and vibes. So a warrior like Saber who's used to using Instinct for her dodges, because it's usually not wrong, will inevitably dodge right into the punch.It's not even that strong of a technique, but it confuses Instinct users. Once you make their Instinct backfire once, they start trying to actively avoid doing what their battle experience tells them to do and get sloppy. Plus Saber was panicked because Rin and Shirou were in danger, so she was trying to end the battle fast and didn't have time to really stop and evaluate the situation.Kazuki even admits it only worked in that one exact situation. If he ever had to fight Saber again, she'd slash him in half without much issue.
