I'm rewatching the show one episode per week on saturdays as a way to celebrate the 30th anniversary and I've been having a blast.
The week between each episode makes me think about what I've seen and anticipate what's to come way more, despite me having seen the show like 8 times already.

You have to see the obvious Angel/Devil imagery used to separate Rei and Asuka to get why Asuka was always endgame.

Rei is meant to look like a cherub, in other words a heavenly being whos' sole job it is to serve god, and so be permanently separated from man, except to serve as messenger. Rei holds this role for Gendo, who is meant to embody a type of father/god archetype. Thus, Rei will always have an element of being unapproachable This breaks down in the third impact, but that is after Gendo is gone.

Asuka, meanwhile, is meant to look like an imp. In other words, a constant, bedeviling presence of temptation and antagonism. She never even speaks to Gendo through the whole show, but is at her sons' literal door for most of the series she is an ever present attachment to Shinji.

So you have a detached Rei and an attached Asuka...Where's the question?

There's also the bridge buddies, but Makoto makes himself relevant after Kaji dies in a horribly cast idea to make him the worlds most pick me secret agent. Also Maya is a solid sapphic and likes Ritsuko, which doesn't go anywhere story wise but does help to explain why she becomes so morally malleable after the midpoint of the show, it's all because she wants that sweet, sweet senpai pussy. Aoba is just kind of there holding a guitar and freaking out at Rei clones. They do fulfill a kind of Greek Chorus/Exposition role in EoE, all while shooting at JSDF soldiers, so that's something.

It's beyond absurd what he did to Asuka and Rei. Either of them made a lot more sense taking Mari's place. And it's not because I hate Mari or I'm obsessed with waifuwars, it's just because it doesn't make sense within the story at all. Mari barely knew Shinji. She had no reason to sacrifice anything for him, at all. In fact, if anything, she had a lot more reasons to do something like that for Asuka, whom she'd been close to many years. Anno is a great animator, a very good director if you only take into account the emotional impact of some moments and forget the plot completely, but an awful, inconsistent writer. Or at least that's the case for Evangelion; in fact I believe Gunbuster is better written.

After rewatching Evangelion and End of Eva, I realised (at least this time) that I actually prefer the anime ending to the film. End of Eva answers more questions about the plot, and it's visually impressive, but the whole point of the series is the message about forgiveness, self-acceptance and opening up your heart to let others in, even if it's painful, and I think the last two episodes do a much better job of exploring those ideas in a more poignant and in-depth way, and doing it through character studies of it's main cast really ties the whole series (which is a character drama more than anything else) together in the end. I love both, and I'm glad we have both, but I was more impressed by the overall quality of the original series this time around. I would even argue that the directing of most episodes is better than the film's too.
If anything though, I think Asuka's character was the one left without the right kind of conclusion in the series, and her manic episode and final fight in End of Eva was a good way for her to go out. She was doomed either way, but she got to go down swinging instead of wallowing like Shinji, so good for her I guess.
I still don't know how I feel about the hospital scene, but Misato kissing Shinji was unequivocally based.

No I don't buy this. In both instances Shinji rejects instrumentality and chooses to live as a flawed human being, but he comes to slightly different conclusions in each. Or rather, the same conclusion, in two different emotional states. NGE has Shinji accept himself for who he is, including his flaws, and realise that he can only love others and be loved by others if he can learn to love himself, and so he rejects suicidality and chooses life. EoE has Shinji sink even lower than his lowest point in NGE, and he acts out far more destructive scenarios in his head during instrumentality. He cannot forgive himself for what he's done (especially not to Asuka) but he can destroy the old self and build a new one (hence Death & Rebirth) and as such he is left alone with Asuka at the end of the world so that she can judge him (and chooses to forgive him). If 25 & 26 are meant to simply exist within the instrumentality scenes in EoE, then they don't quite fit the mood of the film and they certainly don't account for the events that take place in the first half of EoE. They are two alternate endings, with one being idealistic and optimistic, and one more bitter and realistic ending, but both positive in their own way. On reflection, I probably prefer 25 & 26 because it has the message that I want and need to hear, while EoE is an unconfortable truth that stings. You are right in that they are basically reinforcing the same idea, but they certainly don't give the same feeling, and that intended feeling is very important in determining how exactly your audience will engage with your work, and reflect upon it and themselves, and so the two endings have different intentions.

TV: Shinji agrees with the idea of self acceptance, this marks the first step toward happiness, it's just a positive message, the conclusion is up in the air. Anno himself has yet to figure a path to happiness, but he wants to believe it's withint reach.

EoE: Shinji fails to accept himself despite accepting the world is shit. He rejects Asuka and wallows in self pity. Anno who was threatened with death threats by fans because of the original ending has concluded that there's no path to happiness in sight, he has failed, EoE is born from despair and ends with it.

RoE: Shinji finally accepts himself and takes responsiobility for his action, he reaches adulthood and goes to to live his own life away from eva and ths suffering it brings. Anno finally got back on his feet and chose to face his demons, he rejects the failure EoE was, so he's now going back to a positive ending before moving away from the franchise.

I've alluded to this quote a few times on 4chan but I thought it would be better to look it up and post the whole thing.
