Why do so many manga and anime get shitty, rushed, laughable endings? Do the creators ever plan ahead for stuff like that?

Westerners like big "return of the king" type endings with grandiose storytelling that leaves most if not all threads solved, whereas japanese stories work the same way as kabuki plays, focusing more on the journey and not really caring about the destination, often not even "resolving" the main story

People like to tell you that manga is the property and vision of the creator. This is bullshit. The creator doesn't really plan out his story that far or as freely as you think. Frankly they're generally the bitch of their editor and whatever they're told to write they will if they want to stay published. This means loss of vision, having to change your pacing, potentially having to cut your story short or stretch out something you had no real idea about. It often feels like it was something planned in hindsight but generally it's going chapter to chapter by the seat of its pants.

It really does feel like people's ability to process simple concepts and events has deteriorated to a depressing degree. It's a sad state of business when the fans of something can barely pay enough attention to it to understand what happened but will most likely spend three hours on youtube getting it explained by someone who barely understood it as well.

And therein lies the real reason. Mangakas are people desperately trying to stay employed, story quality be damned. So once they get a good popular series, they stick to it and try to milk it for as long as they can. And as we all know, stories that drag on forever fucking suck. If you want worldbuilding or character development, unironically, using the western franchise model (Star Wars, Harry Potter, Halo, etc) brings better results.
