Because that's how their phonetic alphabet is, they don't have standalone consonant sounds like English. So a loan word ending in a consonant would get a vowel added to the end for Japanese pronunciation in accordance to the katakana alphabet.

Because the Japanese language is structured around syllables, not letters, and those syllables tend to be formed of a consonant followed by a vowel. They don't natively have words that end on a hard consonant, so such things are difficult and unfamiliar for them to pronounce. That's how you get things like baiku and waifu from bike and wife. The only exception to this rule is the letter N.

Anon is probably referring to devoicing (which is a spectrum that in some cases terminates in outright deletion), like how we write 'desu' when most of the time it is pronounced closer to 'des'. I have noticed that even in contexts that traditionally wouldn't trigged devoicing Japanese people tend to reduce the -u at the end of gairaigo words
