Because most boys do not want to read a story about a woman whoring around or falling in love with a rapist, and Japanese men don't find manwhores as alluring as westerners (which also frown upon womanizers and promiscuous men). They are different demographics because the vast majority of people in the shounen demographic would rather read a "pure" harem or a story about a hero with a sword than some romcom about the escalation of an adolescent relationship.Women (and girls) love stories about some woman falling in love with multiple men, trying them out and eventually picking one, or just to see a relationship unfold. Boys just want a pure virginal girl to love them for life.It's like asking why adult "romance" novels for women are just smut but male romance novels tend to be about finding love in old age (usually with somebody younger who respects the male lead) or rekindling with their wives. This also applies to josei/seinen by and large, where seinen romance tend to have rather low-libido male leads but tons of whores orbiting them (who may not sleep with the MC), but then josei romance have all sorts of degenerate shit women are into.
