I kind of get it. I was born in 2002 and never got into anime until I was deployed as an 18 year old. The vast majority of stuff I like was made in the 2000's or early 2010's. Things that were on adult swim or Toonami that I never bothered watching. Even though I never watched them at the time, they still remind me of when I was younger so I feel nostalgia. How many 2020's anime have you actually seen?

Be honest, some 2000s anime (like Ergo Proxy, I definitely agree about that, and also Pino is the best) is comfykino of the highest order but there's also a lot of forgettable trash from back then.
Is the trash to comfykino ratio higher with current day anime? Probably a bit, yeah, but you're losing out not watching any new anime. Just this year I can think of several very comfy or good quality shows:

There's something about 2000's anime that was incredibly introspective, an art form designed to chew on the existential thoughts that people wander to late at night. I swear it's something like there more anime per season now than we got per year in the 00s, so there was less competition, less stakes, shows could be a little more original since you weren't competing against 50 popular LN/Manga adaptions each season.
