When fighting heavily armored enemies, this is a better solution. That's why tanks have 120mm cannons and not 30mm Gatling guns.
Gatling guns are good for fighting less heavily armored but fast-moving targets, which is why they are installed as a last resort in CIWS, as anti-aircraft guns , or in aircraft to attack targets from above where they are less armored and flying at high speeds, or to fight each other at very short ranges.
You can build a 120mm or larger gatling gun, it will fire relatively quickly, but it will be damn heavy. What would it be used for?

True Gatling Guns are not a gun you can scale indefinitely. The design uses a machined groove on the inside surface of the cylindrical breach housing to move the bolts for each barrel back and forth. This makes the overall length of the round that can be fired limited by the diameter of the breech cylinder. The largest cartridge a Gatling Gun could be practically built for is not far from the 387mm overall length of the 35x228mm Oerlikon cartridge. GE built a handful of guns in that caliber for one of the contenders for the DIVADS SPAAG contest in the late 70s. It was huge.
Now GE's rival, the Hughes Chain Gun, it does have the ability to be scaled to some seriously large cartridges. Its really a single shot breech loader with a clever autoloader attached, the rate of fire will go down the heavier the cartridge, but physically it could handle naval gun cartridges.

it's fine for you to be ignorant of the entire last 200 years of arms development history of making smaller projectiles travel at higher velocities in order to gain more penetration, or for you to not know what a sabot is and how they are used in anti-tank munitions specifically because a projectile the full bore of a tank gun is less than ideal for armor penetration, but then don't just take a guess and say whatever

If the robot has hands, it can switch out a broken or empty weapon as quickly as you or I can pick one up, be it an assault rifle, gatling gun, or big fuckoff bazooka. A gun-arm would be useless when empty and may be more cumbersome or lengthy to reload, likely requiring an external crew. In NGE they don't typically have the luxury of time once the fight actually starts, so in that sense it's more practical to be able to swap out and reload as quickly as possible.
As far as integrated weapons, Evas are biological in nature so that's not as easy to install as it sounds, but off the top of my head most Gundams have vulcans integrated into the head, chest, or forearms for auxiliary use.

Indeed, the arrow of a sub-caliber tank projectile has a similar caliber and muzzle velocity to a Gatling gun.
However, it is much longer, which means it has greater mass and, consequently, greater energy and penetration. To provide this energy, a larger propellant charge is required.
