The sleeping dart puts someone like Kogoro to blissful sleep for hours a second after it hits, meanwhile Gin kept enough awareness to feel the sleep coming over him and had time to prevent it by shooting himself in the arm.He's seen bleeding from his mouth, so he did sustain damage, he's just enough of a beast to remain standing.

Quick thinking is a skill rarer than you think, thats why even when Kogoro could solve his cases by his own, by the time he made the connection the evidence would be long gone or the suspect would have walked away. Also he's more experienced, so he usually falls on his own bias when assessing the suspects.
