It was initially hyped up because it had an adult protagonist and nothing else. It's a very by-the-numbers shonen though the blonde girl is very cute.

Their special ep was trash waste of time on horrible comedy and second season was quite boring... Rather than having them fight massive kaijus with peculiar anatomy that have a lot of weight behind them we just get another super hero slop.

Was pretty meh. Felt like it had too much comedy in the worst places/moments. The side cast were pretty forgettable. Really just the male cast were forgettable

To give an actual answer it's because it didn't really do much. It had all the piece and enough interesting things, but it never went anywhere.
While everything was pretty basic everyone thought that it was going to get more depth as time went on, it was good enough ground work that could easily improve, but it just never did.

Some examples of failed depth are two things that really stuck out to me:
The blonde chick was said to have studied at the "California Kaiju University ". That's interesting, other parts of the world facing kaiju. It's never even remotely expanded on after the throw away line that it was
There was a meeting that mention other countries grafting kaiju tissue onto people, as a possible way to explain Kafka. Never brought up again

Both of those line would've been expanded upon for two volumes each in another story but wasn't here. And that's why it failed, it never went past its swallow waters.

Kafak's age? Never affected anything beyond the first episodes
The childhood friend? Never has a meaningful conversation with the mc. I don't even think they talked to each other at all really
The friends? Interesting ties and gimmicks, at the end for a chapter or two
The mystery of the kaiju fly that merged with Kafka? Made very simple and boring.

It could've been great, if it decided something meaningful.

There are a good amount of videos that go more in depth, look them up, they're not bad

It's not like the series is bad, but it's just so boring and loses steam after Kafka gets found out and he transfers to a different unit. Other major problems are:

-slow release schedule
-boring main villain
-side characters don't matter. I don't even remember their names
-schizophrenic in how it doesn't know if it wants to keep hetfags or fujos for kafka's attention. Shippers are obnoxious, but they are also a sign of a strong and active fandom. It didn't strike a happy medium leading to not having either side wanting to root for the kafkabowl.

Modern shonen has a serious problem with a lack of worldbuiding

Although relatable for a lot of men, the protagonist can also be really boring.
The entire idea is not that original and has little room to grow.

It came across as shallow for a manga/anime audience. Far too propulsive, when the standard for Japanese media is much more decompressed and even, for lack of a better word, indulgent. And it’s not that I thought it was bad.

I don't think it's just a modern shonen problem. Most Japaness series act as though Japan is the only country that exists. But that's also not a Japanese only problem, as most American series act as though America (or worse, New York) is the only place that exists.

True, but "boring protagnist" and "unoriginal ideas" is something that plagues a lot of modern shonen, including ones that eclipse Kaiju in popularity like MHA, JJK, and Kimetsu.
KN8's lack of popularity is more a side-effect of over-saturation than anything. Had it come out 10 years earlier, it would've made more of an impact.
