Trigun is kind of bland where the story mostly feels like aimless wandering, and it kind of falls apart towards the ending, both in the anime and manga. Bebop is good, and though early on it's kind of an episodic mess, it pulls it all together to develop a well rounded story.

Basically episodic stuff sucks if it feels like it was written by multiple authors who didn't communicate or coordinate at all. Bebop never really has events and characters contradict themselves, and by the end you can see how everything you saw of the characters fits together, but in the moment they do feel more than a bit disjointed.
