Cursed Hand in HF was an evil and unrighteous man, while in Camelot he was an upright man of conviction. Gawain is normally a well mannered knight, but in Camelot he was Arthuria's top genocider. Summoning and their master influences the personality of the hero a lot. Jack would normally be an insane killer, but thanks to his master being an insane but good natured person, Jack turns into a rather demure classy older man/demon.This is basic as shit fate lore; what a servant does in another summoning is entirely disconnected to their current self, because a servants values/nature/ideals/alignment can radically shift between summonings, yes even the same version of the hero. Its been shown there are worlds where even Saber can just decide to wipe out humanity while still being "in character".
