Normally, the rival fights the second-in-command, but since Erza is the strongest one, she’s the one who takes that role. And sometimes, even Lucy who is weaker but more plot relevant faces and defeats stronger arc enemies, so Gray often ends up facing the absolute weakest opponents (and still manages to lose or needing help more than once lol). I guess he beat Ultear, but she nerfed herself pretty badly during the battle.
