I will go with the unpopular opinion and say you should start with the anime.While not being faithful to the manga, it serves as a good introduction to the main characters and its world in general, and you won't burn out watching the whole series compared to the OVAs (almost 9 hours) or reading the manga.And as people already mentioned, the soundtrack is 10/10 and makes it worth watching.

Ultimate is way better BUT the first two episodes are very low budget and look laughable. Ultimate is the only anime in existence that gets better with each passing episodes in terms of animation and budget, with the last few episodes feelings like movie quality.

The problem with 2001 isn't that it doesn't follow the manga, but that the production melted halfway through and the quality of the drawing and animation became increasingly worse and worse. The final fights are atrocious and lack any imagination as well. Which sucks, because those early episodes were great, and in my opinion have a better atmosphere than Ultimate's equivalent.
