We only see 15 domains and in most cases its one sided as only one character in the battle has a domain. And some domains operate with weird rules that aren't even directly related to fighting, 2 for example force non violence until they are resolved.

In the battle depicted in the OP both Gojo and Sukuna's Domains were evenly matched, but Gojo's Domain Expansion is a typical one that requires it to be contained inside a barrier, while Sukuna can just summon his Domain anywhere he wants. They akin that to like painting on thin air instead of on a canvas. As a result Sukuna can fluidly expand and contract the size of his Domain Expansion, and expanded it beyond the range of Gojo's Domain Expansion, allowing Sukuna's Domain to attack it from the outside, destroying it. Gojo then rewrote the rules of his Domain Expansion and tried again. You lose direct access to it, but it becomes part of the Domain's rule itself, meaning attacks made by it are guaranteed to hit and cannot be evaded. The downside is that after a Domain Expansion is done, the area of the brain that handles that technique is overheated and needs to cool down before you can use the technique again. They call this a "burnt-out Cursed Technique", like needing to let a car engine cool off before using it again.
