It could be adapted but it'd be shit and/or require extensive rewriting of the story. It is designed around being a VN and the first-person perspective is extremely important both for the overall narrative and the philosophical themes of the work. It would also require multiple seasons because the routes are meant to be read linearly, so cutting any of them out means big chunks of the story are completely missing.
To me, Subahibi is something like Book of the New Sun or some other VNs where there's really no merit to seeing an anime adaptation unless it's a complete reinterpretation. The experience will always be inferior unless the director is trying to do something new with the original work, as opposed to just putting it on screen.

We could live in a world in which stories that break all imaginable taboos could be adapted and openly discussed as works of art, but instead we live in a hell in which artistic freedom doesn't exist anymore and censorship is endorsed by most people and never questioned. Just sad.
