For me it's FMA 2003, it feels more like a seinen like Monster with its deeper themes and more atmospheric feeling. Meanwhile Brotherhood is just another generic shonen like Demon Slayer or Fairy Tail, pure action slop with unfunny humor and le power of friendship messaging.
