It's kind of magical how nostalgia works for S1 of Pokémon. You remember all the best parts and forget how formulaic / pokemon of the week it is.

The hiatus gave them the time to really get corporate and risk-averse, leading to a whole bunch of boring and forgettable episodes between Fuchsia and Cinnabar that would become the norm in Johto and on, and led to them walking back on evolving Bulbasaur for marketing reasons. There were still good episodes, of course, but those were likely ones mostly made according to the original plan.
