At some point, the plot will form around the party who feel threatened by Hito's existence, probably some sort of escape plot with waif and hito on the run in kemono society, needing support and evading the brown shirts.
Then there is the plot thread of the AI computer and the knowledge it contains, learning to communicate better, societal upheaval from human tech or collapse from miss use etc.
At some point, hito will become a character, hopefully with some good back and forth with waif and good romance.

Seems like this mission is just another voyager mission, but with a live human as well as the compiled knowledge of human culture and civilization.
As for the volunteer, you'd need a special kind of person, but if the ship did go at a significant fraction of the speed of light, he is essentially time traveling through time and space, hoping to get lucky, but you got potentially billions of years to get lucky once. not really, the ship would not keep operating for a million years, he was likely only traversing the cosmos for decades, or a hundred years or so. For him to make any meaningful distance in that time, you would have to go at a very large fraction of the speed of light. at 99.9999999% the speed of light, a hundred years inside of Hito's ship could be 5 billion years back on earth.
Since it is implied that humanity is at a point where it could make a ship go at those speeds and had yet to find life in the universe, we're probably looking at a "young universe" situation, where humanity was alone because earth was one of the very first civilizations in the universe. Hito was going billions of light years into the void for billions of years, in which time more intelligent life sprung up, at some point the ships AI and sensors detected signs of intelligent life and the rest is history.

People will sign up for anything. Remember a while back when they were recruiting people to be potential candidates to go colonize mars?
