Why not watch the old series? There's a 3 month gap between the first two EZY entries and then a 7 month gap between the second and third. That's just the theatrical release at that, no telling how long it'll take for streaming/BD and subs. Might as well watch the originals in that gap.

Patlabor isn't Gundam with 100 different stories with 10 seasons each. It's a relatively short franchise and it's meant to be watched in its entirety.

Despite there being technically two timelines (Early Days OVA + the movies; tv anime + New Files OVA), each Patlabor entry builds upon the concepts introduced in the previous ones. Also, as the graph in the link shows, EZY takes place in the tv (47 episodes + 16 episode OVA) continuity, but the trailer shows a Labor and Labor battle that is a reference to Movie 1.
You can finish the entirery of the series within like a month or so and I doubt EZY will be released outside Japan any time soon.
