Everything else is vastly inferior to the visual novel Fate/stay night which you should read first, but it shouldn't be a big problem if you start with Prisma Illya and read f/sn later. You will encounter some spoilers for f/sn but Prisma Illya is more like a spinoff and not all things are the same and subjects from f/sn are only briefly touched upon.

It has it's own independent story and plot, and takes place in a completely different timeline, but it does have shared backstory with Fate/stay night and the main Fate series. You can watch it on its own and will mostly understand everything, but there will be some background details that won't make any sense, especially later when you get to the Vow in the Snow movie. If you do want to have a full understanding of the story, you at least need to read the Fate/stay night visual novel and watch the Fate/Zero anime. All the other spinoffs are irrelevant to Prisma Illya.
