What do i have to look out for?
Not talking about the big picture stuff like what foods to put on the menu but rather some important details that are easily overlooked for people with little experience.

Im looking to do it with a self pickup type where i need just 1 guy at the register and 1 guy in the kitchen. Im also looking to make it a systemic kitchen where even an ape could operate it.
I want to open it in a city with a big university so i hope maybe i can recruit a few students for part time, what do you think of that idea?

Depends on the country you do it.
If it’s a 1st world country you spend huge bucks fitting out with brand new equipment and ambient design out front only to have it staffed by the dregs of society.
Your suppliers will be cunts.
Your landlord will be an even bigger cunt. Your staff will rob you.
Customers give you bad reviews because they had a bad day rather than a bad meal.
And lastly it’s not really scalable as a business, because it’s a debt trap from day one.
Restaurants and hotels are shit business models and usually are used to launder money.
They are also dying businesses because like nightclubs zoomers don’t really go out like older generations did.

If you must do a restaurant ignore the food component, it’s genuinely the least important thing you’ll sell and focus on creating some narcissistic instagram whore magnet ‘experience’ that’s unique enough to attract that crowd like flies to fresh hot dog shit - then sell it in the first year.

you can have the best food but if people are not into that food or willing to pay that price nothing will help you, not even stellar reviews

I heard that pricing is less of an issue when people pick out the ingredients themselves, because they blame themselves for being too greedy rather than the restaurant for bein expensive, idk if thats true.
My concept is a chinese style restaurant that only sells hotpot streetfood style.

I.e. you go up to the freezer, get a bowl and put in what you want. Bring it to the register and pay per pound. Then its cooked in a hotpot and you get notified when your bowl is ready.
Its in a university town in europe so there are alot of chinks around and on top next to the planned location a big factory/business building slightly off the center is going to be built.

First step is to have enough capital. If you don't have $1M+ to dedicate to this project, you don't have the starting capital necessary and will fail.

You will equally need social capital. Why will people want to come to your restaurant other than food? The food needs to be good and on point or you'll fail within weeks, but they need a compelling reason to choose you over everyone else first. There are just too many choices. So you're going to have to figure out some social capital.

Could it be that these figures of 70% or so being broke so quickly could stem from it being a very low hanging fruit in terms of ideas and it having a low barrier of entry (like no required qualifications, even g00ks who dont speak english can just open a noodle shop)
