Theoretically speaking, what would raccoons be good for if we domesticated them? Would they be pest controllers like cats? Could we use their fur? Maybe they could've been useful for finding food in older times?

They were very popular for their meat up until about a hundred years ago, and the furs are still valuable. But generally animals have coat changes when they are domesticated and I don't know if the domestication would preserve the qualities of their fur that are desirable.

With what little I know about raccoon behaviour, I can't imagine they'd be good for anything other than being cute.

Their fur is useful yes. Otherwise I don't think they have much use to humans beyond companionship as pets, but they're also difficult pets to keep, a bit too smart and curious. They're good in the wild for cleaning stuff up, since they'll eat pretty much anything.

I have a bird bath on my deck railing and when raccoons go up there they always leave it very dirty, they wash their hands in it. I put some copper heat plates in it because the copper is supposed to help prevent algae and mold, the raccoons took them out.
Crows put their food in it too, they'll put peanuts in. I've seen various explanations of this, they could be trying to soften it, or use water to enhance the flavor. They'll also put suet in it but this makes it too soft and it falls apart and just becomes a mess, then they don't eat it, so maybe they aren't so logical about it.

I wouldn't be surprised if they were used for this. When people find themselves in unfamiliar terrotory they will often watch animals in order to figure out where to find food and water. Unless those people don't know anything about animals.
