I was homeless from 2014-16 and ate a shitload of fish from a nearby river. It was most of my diet during certain parts of the year, especially fall.
Went to a fancy sushi place several times since 2020 and all I get are flashbacks to sitting under a bridge eating fishguts and hand sliced fillets. Even the expensive stuff is just fucking raw fish covered in diseased mushroom sauce. I don't get it.

They add sauces, creams, spices and seasonings that make the flavor experience so much better. That said, I'll always enjoy salmon sashimi, but I think the general attitude towards "nuanced" and "delicate" flavors is largely cope, those are just fancy words for "bland" and if the Japanese REALLY preferred bland food, curry wouldn't be such a hit over there.

I'm currently living in a small city of around 30k people on the East coast and off the top of my head I can name 8 sushi places within a 30 minute drive.
