I've had a lot of sushi over the years, I have to confess something bros. I really, really prefer the cooked variants served at family style conveyor belt sushi restaurants. They add sauces, creams, spices and seasonings that make the flavor experience so much better. That said, I'll always enjoy salmon sashimi, but I think the general attitude towards "nuanced" and "delicate" flavors is largely cope, those are just fancy words for "bland" and if the Japanese REALLY preferred bland food, curry wouldn't be such a hit over there.
