What some good pesto variants? I've tried basil and coriander both ended up being excellent.

It isn't spicy at all if that's what you're asking. It's more sour in the same way that concentrate
tomato paste is. I like it personally.

If you want to level all the way up you can just make pesto out of literally any herbs you want.

good options! i like to make one with pepperonchini, anchovy and 25/75 walnuts to pinenuts. i once tried to make a SUPER green one, where i used 50/50 pistachios and pine nuts. if you wanna get reeeeal cheffy with it, i also cooked the olive oil in some blended up spinach. if you do it for about 7 minutes on 60-80 degrees, while blending it gets a super brilliant green hue. and then pour the mix into a bag, and let it hang so it separates into water, plant-paste and oil, and strain it out. CRAZY color, the pesto you get from this just pisses beauty on anything you cook it

I've had pesto that was made without any nuts. Probably my favorite out of the pestos I've tried. But I personally don't like most nutty tastes.
