Good call, pork and cream work really well together in soups and stew. Looks pretty similar to pea and pork soup that's pretty common in nordic countries. Usually goes well with adding mustard and thyme when you prep a bowl.

I'd typically go with some stone ground or sweeter mustard because dijon might be too sharp. Could work though. Basically just use a spoon and drizzle in circular motion.

It's usually best if you add it to the bowl itself, not the pot you cook it all in

Yeah just do it to taste. The reason people usually add it to the bowl is because everyone have different taste in how much mustard flavor they want, but if you're cooking for yourself that doesn't really matter i guess
