It's rice, washed thoroughly, cooked in a giant rice cooker, then seasoned with sushi rice vinegar and carefully worked with a paddle until it has the correct texture.The problem is that the texture you want is very specific. Every brand of rice, even if its the same variety, has slightly different characteristics. Every different crop as well. Even if its the same brand, if the crop changes, the rice does.The biggest things are the moisture content and the starch. It varies a fair bit between each crop/brand, and so every time I got a new order of rice, I had to test it to figure out how much water I needed to use, and how much it needed to be washed. Because the batches I was doing were anywhere from 12-28 liters of dry rice, even small differences became significant when scaled up.Then, once it comes out, I have to adjust the amount of vinegar used and the amount I work the rice to give it the proper texture, because its also affected by humidity in the shop, which varied by season.When you are working it, you have to use a lot of strength but also avoid crushing it. It's a combination of exertion and dextrous movement that takes quite a while to master. It is quite difficult compared to most kitchen tasks. Usually, the issues for me are multitasking effectively and maintaining a high production rate, not doing any individual task properly, but Sushi rice was a different story. I had every other item in the kitchen, both the menu and all the prep, down to a solid degree of competence, but it took me two months before my boss didn't have to supervise on the rice. And this wasn't even a particularly high end restaurant. It's just necessary for decent sushi.
