an appropriate salad can be very welcome at a potluck. i've done crushed cucumber salad or even just sliced cherry tomato and cucumber tossed in a vinaigrette and some herbs. big romaine leaves that you have to dress separately does not work, you need something that people can take a scoop of, like tabbouleh like the other guy said
