You can stir fry with them too. https://thewoksoflife.com/vegetable-ramen/ You can just use this recipe as a general template. It's a great way to use up various vegetables you've got in the fridge.

pro-tip: I usually halve the recipe so it fits in my pan better (I just use a regular skillet to make it, not a wok) and I rub a little sesame oil in.
