It won't make them softer when they're done cooking, they just finish faster. Unsoaked lentils might take 45 minutes to an hour, soaked maybe 20-30 minutes. Soaking just speeds up cooking time.

Some people like to soak lentils and beans, then drain the water and cook in fresh water. Helps remove some of the stuff that causes gas.
