anyone hates greasy eggs like I do? when I fry egg I always use very little amount of oil (enough for the pan/skillet) then I use a lid and maybe a few drops of water + low heat to make sure the bottom is not overcooked, still silky smooth while the yolk is moist and creamy.

it retains most flavor of the egg over cooking methods like deep fry the eggs in oil / using too much butter

just for reference, I live in vietnam and it's very common to just fry eggs in a large batch of oil till it's crispy. every time I take a bite the oil just spills out of the egg and fill my fucking mouth.

I let mine warm up for about 20 mins before cracking them. you could just run them under the tap do speed it up. they definitely whisk better when warmer, but yeah if your pan is at the proper temp for cooking then whatever really. cold may be better for over easy since the yolk will take longer to cook.

Here's what you're gonna do /ck/. Listen carefully because this is very important advice. Lots of people think cooking is all about complicated recipes, big cookbooks and arduous effort. Really it's more of an innate thing.

Learning to cook is much more simple, so pay close attention to what I'm going to say. Are you listening?

Fry an egg and experiment with various seasoning. This will give you an idea of what flavours go well together which is the most important quality in cooking. Fry an egg, cut it in quarter, season each quarter differently. Try one with cayenne and, I dunno, chives? Just experiment with lots of seasoning combinations.

Then fry another egg and repeat the process. Keep frying eggs and experimenting until you get a good idea of what works. You can eat 3-4 eggs in a day, heck if you're from /fit/ probably 6+. If you eat 6 eggs in a day, that's 24 egg quarters, 24 seasoning combinations in a day. You're talkng about 1000 seasoning combinations in just over a month.

At this stage you'll be a spicemaster and what/how you cook wont matter because you'll be better at seasoning than 99% of professional chefs, and this WILL make you a good cook.

it's molten gold if it's cooked just right. I usually cook an over easy egg when I'm eating pasta dishes and slam it on top of the pasta with the less cooked side down so the yolk runs into it, it's absolutely tops. the yolk has to be in that solidifying but not yet solid state for maximum taste.
