I don't. I cover it liberally with Tony Chachere's and throw it in the oven at 425°F for ~20-25 minutes, however long to get to 165°F internal.

I’ll velvet your asshole in a second, you little faggot.

Is there any real benefit to doing this, or is this just another "black people wash they chicken" meme?
>>
>>20844487
This is a real thing, Chinese food places do it with meats and it’s what can make it so tender.
>>
>>20844487
>Is there any real benefit to doing this
Yeah, it browns on the outside easier while sealing more moisture on the inside, makes it more tender. That's my experience with a more chinese style of velveting, at least, using an egg white and a bit of corn starch.

Why do all poor people use the same low grade seasoning?
>>
>>20844561
I don't take cooking advice from people who eat dogs and cats

>it says white on my driver’s license
What kind of a shithole country has racial identification on a drivers license?
>>
>>20845239
Not poor, just fucking love tonys. Its easy and tastes good. I also make a lot of fucking chicken almost every week for meal prep. Don't feel like getting fancy with it, just want it cooked and edible.
I will accept Old Bay at a crawfish/seafood boil.
>>
>>20845248
Dog and cat meat is very tough- any people that can make it edible are clearly competent in the kitchen
>>
>>20844487
turning meat alkaline causes it to burn faster. a better velveting method is to marinade it in oil and corn starch
